Ingredients:
• 2 Tbsp Olive Oil, Extra Virgin
• 2 Tbsp Rosemary, fresh, chopped
• 3 Beets, chopped
• 1/2 tsp salt & pepper
Instructions:
1 – Preheat the oven to roast at 400°F;
2 – In a baking dish, toss beets in olive oil, salt, pepper, and rosemary;
3 – Roast beets for 35 minutes, or until crispy on the outside and tender in the center.
