How to Cook Fresh Beets

Prep Time: 5 minutes | Cook Time: 18 minutes.

Beets are so flavorful and healthy. We will cook beets in the pressure cooker or instant pot.  Usually, beets take very long to cook, however, they are quick in the pressure cooker.

I love beets, especially after knowing their nutritional value.  Beets are low in fat, full of vitamins, minerals, iron, and packed with powerful antioxidants. They are also an excellent source of folic acid and a very good source of fiber, manganese, and potassium.

Did you know you can eat beet greens? Well, you can! The delicious and nutritious leaves make a fantastic side dish. Beet greens are often tossed. But next time, make the most of your fresh beets and don’t throw the beet greens away! Instead, try this simple recipe Sautee beets Leaves.

Ways to Cook Beets:

I know how to roast beets really easily, but I figured there had to be a faster way to pressure cook them in the Instant Pot. The Instant Pot is my new best friend, these days.

Let’s Go to the Recipe:

You want to work with really clean beets. To cook them, all you do is add some water to the bottom of the Instant Pot and put the beets on in. I pressure cook them for 18 minutes and let it naturally release for a bit before releasing the pressure manually.

Ingredients:

• 5 medium beets

• 3-4 cups water 

Instructions:

1 – Scrub the beets well and trim the greens off, leaving a 1-inch stem. Rinse really well.

2 – Pour the water into the instant pot.

3 – Place the clean beets in the Instant Pot.

4 – Select “Pressure Cook” or “Manual” on high pressure and set the cycle to 18 minutes.

5 – Allow the cycle to run and let the Instant Pot naturally release for 10 minutes.

6 Remove the beets from the Instant Pot, and allow them to cool.

7 Serve or store in the fridge for about a week!

These cooked beet pair perfectly with almost any entree. Serve them on the side of chicken, fish, steak, a green salada or countless other main dishes.

What do you do with the water after cooking beets?
