Who doesn’t love a good taco on taco Tuesday or in all honest, whatever day it is, I’m here for it!!?
This grain free tacos make taco night even better because they are both healthy and easy to make. We have these gluten free chicken and meat tacos at least once a month.
Tacos are our go-to weeknight dinners. We always have chicken breasts and ground beef on hand. From these ingredients, we can make a good variety of dishes, taco is one of them 🙂
I like making the chicken on my instant pot.
To make this Instant Pot chicken recipe:
1 – Add the chicken in the Instant Pot;
2 – Pressure cook. Cover with the lid and pressure cook on high for 15 minutes, followed by a 5 minute natural release, followed by a quick release with whatever pressure remains;
3 – Shred. Remove the lid and use two forks to shred the chicken. Give it a thorough toss with the remaining juices in the Instant Pot;
4 – Sautéed shredded chicken. Stir in 2/3 cup water and the taco seasoning mix; cook over medium heat 5 to 6 minutes, stirring frequently, until chicken is heated through and sauce is thickened.
Ground Beef:
I prefer to use 90% lean grass-fed ground beef for tacos for the best flavor and consistency. If it’s any more lean, it may be too dry. If you use a less lean kind, make sure to drain off the fat after cooking the ground beef, before adding the seasoning.
How to Prepare:
• Heat the pan (and oil). In order to brown, rather than steam, the pan needs to be hot. Adding oil is optional but recommended for better browning.
• Add the meat to the pan.
• Break the beef into smaller pieces as it cooks. As the beef begins to brown, continue to break the meat into smaller and smaller pieces.
• Cook until browned.
• Add salt & pepper, cumin to taste, jalapeño, garlic, to taste.
Homemade Avocado:
We love to make guacamole to eat on the side or to use as a topping.
This is the best guacamole recipe as it’s simple to make and uses fresh ingredients. Authentic guacamole doesn’t contain fillers and unnecessary ingredients.
All you need is avocados, tomatoes, salt and pepper and olive oil. Easy and delicious!

I like to keep it simple with usually a few different toppings when I’m making these just for the family on weeknights.
Taco Holders:
This stylish and functional taco holders is a must-have! Tacos are sometimes messy to eat and hard to put on a plate without all of the fillings spilling out. And the great news it is safe to place the taco holders in the oven.
Tip:
• Preheat your oven to 350 degrees.
• Place the empty shells or fully completed with the toppings in the oven to warm them for about 3-5 minutes.
