Gluten Free Chocolate Chips Cookies – Low in Sugar

Today I am sharing with you a surprising recipe for gluten free chocolate chip cookies. Like many of you, I was craving these delicious treats but I wanted something healthier and without a long list of ingredients. After searching for a gluten free recipe, I found one that looked promising, but it had 120 g of sugar, and other ingredients that I wasn’t too keen on.

So, I decided to modify the recipe and let me tell you, the result was incredible! These cookies are not only gluten free, but also low in sugar and require minimal ingredients. You won’t believe how easy and delicious they are.

To make these cookies, you will need gluten free flour, light brown sugar, baking soda, eggs, vanilla extract, gluten free dark chocolate chips and a pinch of salt. I will leave the full list of ingredients and measurements in the description box below.

Ingrediens:

• 100 g (¾ stick + 1 tbsp) unsalted butter or ghee melted and cooled to room temperature

• 40 g light soft brown sugar

• 2 large eggs

• ½ tsp vanilla extract

• 200 gr plain gluten free flour

• 1 tsp baking powder

• ½ tsp salt

• ½ tsp salt

• 100 g dark chocolate chips

Directions:

1 – First, we will mix the dry ingredients together, baking powder and salt.

2 – Using a stand mixer fitted with the paddle attachment or a hand mixer fitted with the double beaters, cream the butter and sugar together until pale and fluffy. You can also use a large balloon whisk and do it by hand.

3 – Add the egg and vanilla extract, and mix until fully combined.

4 – Add the dry ingredients to the wet in two batches, mixing well

5 – Add in the chocolate chips and mix well until evenly distributed.

6 – Chill the cookie dough for about 1 hour or until firm enough to scoop

7 – Use a “2 tablespoon” ice cream or cookie scoop to scoop individual portions of cookie dough. You should get 14 cookies in total.

8 – Place them onto a baking sheet lined with baking/greaseproof paper

9 – Pre-heat the oven to 350ºF
