I’m in love with this easy zoodles recipe. There’s fresh zucchini, fresh basil, parmesan, and garlic. The best part? It only takes 20 minutes to make. Enjoy these as a light meal, low on calories and carbs while having maximum flavor! Add some protein such as ground turkey.
Honestly, I like zucchini pasta for the low-carb benefits, but I do think it takes some attention to detail to turn zucchini noodles into a dish that’s really tasty.
Ingredients:
• 1 pound ground turkey
• 1 teaspoon ground black pepper
• 1 jar tomato sauce
• 1 teaspoon salt, or more to taste
• 1 hand full fresh basil
• 3 garlic cloves
• ½ teaspoon onion powder
• ¼ teaspoon red pepper flakes
• 3 zucchini, cut into long strands
• 1 teaspoon coconut oil
• 2-4 tablespoon parmesan cheese
Directions:
1 – Heat a large skillet over medium-high heat. Cook and stir ground turkey with salt and black pepper in the hot skillet until browned and crumbly, 5 to 10 minutes; drain and discard grease. Reserve.
2 – Make the sauce in the same pan you cooked the meat. Add the turkey meat, basil, red pepper flakes into red sauce. Cook and stir until sauce is warmed through.
3 – Grease the pan with coconut oil. Sautéed zucchini with garlic until soften or your preference consistency.
4 – Mix zucchini “noodles” into sauce, pressing down to fully submerge them; simmer over medium-low heat until zucchini is tender, about 10 minutes.
5 – Top the pasta with freshly-grated parmesan cheese.
