I like to eat broccoli once week, it’s so healthy, yummy, versatile, and it’s really inexpensive 🙂
Also the benefits are incredible. Broccoli is high in many nutrients such as: fiber, vitamin C, vitamin K, iron, and potassium. Eat your broccoli!
My kids eat it up and sometimes even asks for more. This flavourful recipe is a perfect side dish or even to snack on.
Ingredients:
• 1 1/2 pounds (680g) broccoli (about 2 medium crowns), cut into florets of even size
• 3 to 4 tablespoons extra virgin olive oil
• 1 tablespoon smoked paprika
• 1 tablespoon garlic powder
• Salt and freshly ground black pepper to taste
• 1/4 cup grated Parmesan cheese, or to taste
Directions:
1 – Preheat your oven to 400 degrees F.
Peel the outer layer of the broccoli stalks keeping the stalk and broccoli florets intact.
2 – Arrange in a single layer on a baking sheet. Drizzle with olive oil and season with the seasoning mix. Toss to coat, cover it with foil and in to the oven for about 20-25 minutes.
3 – Remove the foil, turn broccoli over and sprinkle with grated the Parmesan.
4 – Cook until the Parmesan melts, about 5 minutes.
5 – Transfer to a serving bowl or platter and serve immediately.
