Lemon Arugula Salad

Prep Time: 5 minutes 

I was inspired by a dear friend, Magan Drane, with this recipe. She said her daughter, Zoey, loves it so much that she eats it for breakfast…that’s right, salad for breakfast. So healthy!

This simple and fresh arugula salad with olive oil, red onion and parmesan cheese is so easy to put together, and it makes a wonderful side dish for almost any meal.

You could also add a protein such as shredded cooked chicken or my favorite salmon recipe and turn it into a main-dish salad.

Ingredients:

• 2 cup argula

• ¼ cup red onion thinly sliced

• 3 tablespoons olive oil extra-virgin

• ¼ teaspoon salt

• ¼ teaspoon black pepper freshly ground

• ⅓ cup freshly-grated parmesan cheese

Directions:

1 –  Arrange the arugula, red onions, lemon juice and onions in a serving bowl.

2 – Briefly mix the oil  and drizzle them over the vegetables.

3 –  Sprinkle the salad with kosher salt and black pepper.

4 –  Top the salad with freshly-grated parmesan cheese.

5 –  Toss until well mixed and taste for seasoning.
